Heritage (a lot of a little)*
Pelješac, south side, Korčula channel, at the very end of the peninsula, a waft of maestral far from the island of Hvar, the month of May. The scented shimmering yellows of the Spanish Broom (lat. Spartium junceum) in dome alternations with the other shrubs, above the rocks of St. Elijah hill like the mark of Perun. Mythic scenery for the profane torment of the farm laborer trying to survive. Narrow stretch of land between Mali Ston and Korčula. From generation to generation, families of farm laborers passed on the time-tested Roman method of obtaining the best wine from the grapevine which grows in the same place as the Spanish Broom or Weaver’s Broom. In this age of precise chemical analysis, this connection between the yellow mark of the landscape, the suitable soil structure and the microclimate conditions has been scientifically confirmed. The combination of the experience of old and oenological knowledge are used to precisely locate a vineyard. Modern oenology demands in situ production. The winery is located 50 meters from the seaside, from a little cove with a beach, a bridge and a lighthouse, just below an old small church. The entire production area is dug in a steep slope. Processing of grapes, from the fermenting process and the stainless steel containers to the barique barrels, is gradually zoned within the section. Difference in altitude allows the valuable juice to freefall, and the space, the concrete structure in the rock provides cold, humidity and stability of the inner climate. The terrace and the pavilion in the vineyards are the only remnants with the view of the Korčula channel.

Pelješac, južna strana, korčulanski kanal, sam kraj poluotoka, zapuh maestrala udaljen od Hvara, mjesec svibanj. Mirisno treperavo žutilo brnistre (lat. Spartium junceum) u kalotastim alternacijama s ostalom makijom, nadvoj stijena sv. Ilije kao Perunov biljeg. Mitski krajolik profane muke preživljavanja težaka. Uski potez kopna između malostonskog i korčulanskoga. S koljena na koljeno, u težačkim obiteljima prenosi se stara rimska iskustvena metoda da vinova loza daje najbolje vino na pozicijama gdje raste brnistra ili žuka. U današnje doba preciznih kemijskih analiza ova veza između žutog znaka krajolika i pogodnog sastava zemlje, te mikroklimatskih uvjeta, znanstveno je potvrđena. Spoj drevnog iskustva i enološkog znanja savršeno locira vinograd. Moderna enologija zahtijeva proizvodnju in situ. Vinarija je 50 m udaljena od mora, od male uvale s plažom, mostom i svjetionikom, ispod stare crkvice. Kompletan prostor proizvodnje ukopan je u strmu padinu. Prerada grozda, od fermentiranja preko inoks-posuda do barique bačava, postupno je zoniran unutar presjeka. Visinska razlika omogućuje slobodan pad vrijednog soka, a dimenzija prostora, betonska konstrukcija u stijeni, osigurava hladnoću, vlažnost i stabilnost unutrašnje klime. Terasa i paviljon u vinogradima jedini su tragovi s pogledom prema korčulanskom kanalu.
